Coconut-cranberry Muffins Recipe

Ingredients
  • 2 tsps baking powder .
  • 1/4 c butter, melted .
  • 1/2 tsp vanilla extract .
  • 2 tsps sugar .
  • 1 c dried sweetened cranberries .
  • 1 large egg, lightly beaten .
  • 1/4 tsp salt .
  • 2 c flour .
  • 2/3 c coconut milk .
  • 1 tsp grated lemon rind .
  • 2/3 c sugar

Directions
  • Step #1 Preheat oven to 400.
  • Step #2 Lightly spoon flour into dry measuring c; level with knife.
  • Step #3 Combine flour, & salt in a medium bowl, baking powder, sugar, stirring with a whisk.
  • Step #4 Stir in cranberries; make a well in the center of the mixture.
  • Step #5 In a seperate bowl, mix coconut milk, vanilla, lemon rind, butter, & egg.
  • Step #6 Add to flour mixture, stirring just until moist.
  • Step #7 Place 12 muffin c liners in the pan.
  • Step #8 Spoon batter into lined c.
  • Step #9 Sprinkle top evenly with 2 tsps sugar.
  • Step #10 Bake for 20 mins.
