Pepper-crusted Filet Mignon
Ingredients
3 c red wine .
3 shallots, sliced .
2 tbsps butter .
2 bay leaves .
1 1/2 c water .
2 tsps water .
4 tbsps seasoning, such as Spice Hunter's Steak & Chop, Grill & Broil .
4 tbsps heavy cream .
Ancho or Anaheim Horseradish Sauce .
Filet .
4 (8 oz) beef tenderloin fillets .
1/2 c horseradish .
1 tbsp dried thyme .
2 tbsps cornstarch, mixed with .
3 garlic cloves, sliced .
1/4 c olive oil .
3 anaheim chilies, split, de-veined & seeded (you may use anchos or Poblanos, if available) .
2 c mixed mushrooms, of your choice (such as shitakes, oyster, button) .
3/4 c beef stock
Directions
Step #1 To prepare Ancho/Anaheim Horseradish:.
Step #2 Put olive oil in pan & saute peppers, shallots & garlic over low heat/flame, covered, until soft but not browned.
Step #3 Add red wine & let simmer for 30 mins.
Step #4 Add beef stock, bay leaves, thyme, horseradish & let simmer 30 mins.
Step #5 In a small jar, mix 2 tbsps cornstarch with 2 tbsps cold water & shake.
Step #6 Add the cornstarch mixture & the remaining 1 1/2 c of water to thicken the sauce.
Step #7 Strain mixture through a fine-sieved colander.
Step #8 To prepare steaks:.
Step #9 Spice up steaks with seasoning mixture.
Step #10 Grill steaks on both sides or broil to desired doneness.
Step #11 While steak is grilling, in a skillet, heat the 2 tbsps butter, the 2 c of ancho sauce & the mushrooms until the mushrooms are softened.
Step #12 Add cream to mushroom mix & let simmer just until warmed.
Step #13 Pour mushroom sauce mixture over steaks & serve.
