Penne Alla Gremolata Recipe

Ingredients
  • 1 tbsp fresh basil, minced or 1/2 tsp dried basil .
  • 1/2 c flat leaf parsley, sliced .
  • 1/2-1 tsp lemon rind, grated fresh .
  • 1 tbsp extra virgin olive oil .
  • 1/2 lb penne .
  • 1 (14 1/2 oz) can sliced tomatoes with juice .
  • 2 garlic cloves, minced

Directions
  • Step #1 Mix together parsley, lemon peel, & garlic & set aside.
  • Step #2 Heat half the evoo in a small saucepan; add the can of sliced tomatoes, juice & all.
  • Step #3 If using dried basil, add it now.
  • Step #4 Simmer 10 mins.
  • Step #5 If using fresh basil, add it now.
  • Step #6 Cook pasta until al dente & drain.
  • Step #7 Toss the pasta with the rest of the evoo.
  • Step #8 Add the tomato mixture & the parsley mixture & mix well.
