Ingredients
  • 1 large tomato, sliced .
  • 6 limes, wedges .
  • 3 tbsps olive oil .
  • 2 tbsps lime juice .
  • 1/2 tsp salt .
  • 1 avocado, sliced .
  • 1/4 tsp pepper .
  • 3 c romaine lettuce, shredded .
  • 3 c cooked basmati rice .
  • 3 tbsps cilantro, snipped .
  • 3 tbsps lemon juice .
  • 2 tbsps jalapenos, sliced .
  • 3/4 c vidalia onions, sliced

Directions
  • Step #1 In a large bowl mix rice, olive oil, tomato, jalapenos, cilantro, lemon juice, onion, salt & pepper.
  • Step #2 Toss avocado with lime juice; stir in theto rice mixture.
  • Step #3 Cover up & chill for 2 to 8 hrs.
  • Step #4 Spoon mixture on top of shredded romaine lettuce.
  • Step #5 Serve with lime wedges.
