2 shallots, coarsely sliced or 1 small onion, coarsely sliced .
2 tbsps cognac or brandy .
3 macintosh apples (about 1 1/2 lbs.) .
1/8 tsp cracked black pepper
Directions
Step #1 Wash chicken; dry on paper towels.
Step #2 Trim fat with scissors, if necessary.
Step #3 Pare, core, & quarter apples.
Step #4 In a large, heavy skillet, heat 2 tbsps butter; add shallot & basil.
Step #5 Cook shallot until slightly transparent; add half of chicken breasts; sauté over med.
Step #6 heat until golden-about 15 mins.
Step #7 Remove chicken from skillet.
Step #8 Add the remaining tbsps butter & remaining chicken; sauté until golden--15 min.
Step #9 Return all chicken to skillet; add apple.
Step #10 Cook carefully, uncovered & stirring every once in awhile, 5 min Add 1/4 Cup of wine, cook several min; add another 1/4 Cup wine; cook several min longer.
Step #11 Add remaining wine, pepper, the salt, & nutmeg; continue cooking until apple is tender.
Step #12 Meanwhile, mix cream, Cognac, flour, in small bowl, & egg yolks; mix well.
