Ingredients
1 tsp red pepper flakes .
1 tbsp chili powder .
Main Dish .
1 (1 oz) envelope Lipton Onion Soup Mix .
2 tbsps flour .
2 tbsps vegetable oil .
1 1/2 c baby carrots, peeled .
1 large green bell pepper, sliced into 1/2 strips .
1/2 chinese snow peas, trimmed .
1 lb boneless tri-tip steak, cut into 1 inch chucks .
salt & pepper .
1 (13 1/2 oz) can coconut milk .
Sides .
1 1/2 c medium grain rice, cooked according to package directions .
4 tbsps curry powder .
2 medium russet potatoes, peeled & sliced into 1 inch chucks .
1/2 tsp red cayenne pepper .
2 tbsps vegetable oil
Directions
Step #1 In a medium bowl, mix flour, chili powder, curry powder, red pepper flakes & red pepper.
Step #2 Add beef; toss to coat.
Step #3 In a large nonstick skillet, heat oil over medium-high heat.
Step #4 Add coated beef to skillet & brown all sides of meat, turning constantly, for about 5 mins.
Step #5 In a slow cooker (aka crockpot), add coconut milk, potatoes, bell pepper & onion soup mix.
Step #6 With a slotted spoon, transfer cooked beef to slow cooker (aka crockpot).
Step #7 Stir to mix thoroughly.
Step #8 If you want the carrots to be very soft, add them at this time.
Step #9 If you prefer crisper carrots, wait until 1 hr of cooking time remains & then add the carrots.
Step #10 Cover up & cook on LOW for 4 to 5 hrs or on HIGH 2 to 3 hrs until the mixture is bubbling.
Step #11 In a sauté pan, heat oil.
Step #12 Add snow peas & toss for one min.
Step #13 Add 2 tbsps of water & cook this until crispy.
Step #14 To serve, place beef curry on top of rice & spoon with sauce.
Step #15 Place snow peas on top of plate.
