Cinnamon Coffee Cakeii Recipe

Ingredients
  • 1/2 c shortening
  • 1 tsp baking soda
  •  
  • 1 c white sugar
  • 1 (8 oz) container sour cream
  • 1/2 c brown sugar
  • 2 tsps ground cinnamon
  • 1/4 tsp salt
  • 2 c all-purpose flour
  • 1 tsp vanilla extract
  • 1 1/2 tsps baking powder
  • 2 eggs

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 10 inch tube pan.
  • Step #3 Sift together the flour, baking powder, baking soda & salt.
  • Step #4 Set aside.
  • Step #5 In a large bowl, cream together the shortening & sugar until light & fluffy.
  • Step #6 Beat in the eggs one at a time, then stir in the the sour cream & vanilla.
  • Step #7 Beat in the flour mixture, just until incorporated.
  • Step #8 Pour half of batter into prepared pan.
  • Step #9 In a small bowl, mix brown sugar & cinnamon.
  • Step #10 Sprinkle top half of mixture over batter.
  • Step #11 Add remainder of batter & sprinkle with rest of topping.
  • Step #12 With the tip of a knife, swirl lightly through the batter.
  • Step #13 Bake in the preheated oven for 40 to 50 mins, or until a toothpick inserted into the center of the cake comes out clean.
  • Step #14 Let cool in pan for 10 mins, then turn out onto a wire rack & cool completely.
