Catfish Cakes Recipe

Ingredients
  • 1 lb catfish fillets (cooked & cooled) .
  • 2 1/2 c crushed Ritz crackers (or use similar buttery crackers) .
  • 1 green onion, finely sliced .
  • 2 tbsps Miracle Whip .
  • black pepper (optional) .
  • 1 tsp cajun seasoning (can use more) .
  • 1 egg, slightly beaten .
  • 2 tsps prepared yellow mustard .
  • 2 tbsps fresh minced parsley (optional) .
  • 1/4 tsp garlic powder .
  • flour, for coating .
  • oil (for frying)

Directions
  • Step #1 In a large bowl mash the cooked catfish fillets.
  • Step #2 Add in all remaining ingredients except flour; mix to mix (adding in more Cajun seasoning if desired & salt & pepper to taste).
  • Step #3 Shape into 8 patties.
  • Step #4 Place flour onto a plate then dredge the cakes into the flour to coat on both sides.
  • Step #5 Heat oil in a skillet over medium-high heat, then fry four cakes at a time in hot oil turning once until golden brown (about 3 mins on each side).
  • Step #6 Place onto paper towels.
