Grilled Scallops With Tomato-onion Relish Recipe

Ingredients
  • vegetable oil, to brush grill .
  • 3/4 tsp salt .
  • 1 tsp sugar .
  • 1/2 c red onions, finely sliced .
  • 4 tsps red wine vinegar .
  • 2 tbsps fresh dill, sliced .
  • 24 sea scallops, about 1 1/2 lbs .
  • 1 large tomato, seeded, sliced

Directions
  • Step #1 Prepare grill.
  • Step #2 Soak onion in 1 c of water with 1/2 tsps salt for 15 mins & then drain.
  • Step #3 Stir together the onion, vinegar, tomato, sugar & remaining 1/4 tsps salt & let this stand for 20 mins.
  • Step #4 Drain relish in a sieve, discarding liquid, then stir in the dill.
  • Step #5 Cook the scallops while the relish is standing by patting them dry with paper towels & adding salt & pepper to season.
  • Step #6 Grill in 2 batched on lightly oiled grill rack, turning once, until just cooked through, 4-5 mins.
  • Step #7 Serve scallops with relish.
