Restaurant-style French Onion Soup Recipe

Ingredients
  • 1 tbsp olive oil .
  • 4 c beef stock (homemade or prepared, high quality beef soup base) .
  • 4 slices stale bread (preferably French or Italian) .
  • 4 slices provolone cheese or swiss cheese .
  • 2 onions, sliced in rings .
  • 1 tbsp butter

Directions
  • Step #1 Heat olive oil & butter together in a pan large enough to hold the onions & broth.
  • Step #2 Saute onions very carefully in half olive oil & half butter until soft & golden but do not allow them to brown.
  • Step #3 Pour beef stock into the pan with the onions & let simmer carefully for 1/2 an hr.
  • Step #4 Spice up to taste with salt & pepper.
  • Step #5 Divide into oven-proof bowls.
  • Step #6 Float the stale bread on top.
  • Step #7 Cover up with the cheese & broil until the cheese bubbles & browns.
