Mussels With Tomatoes & Jalepenos! Recipe

Ingredients
  • 1/2 c thinly sliced celery .
  • 6 slices fresh jalapenos (1/4-inch-thick) .
  • 1/4 c tequila .
  • 2 tbsps fresh lime juice .
  • 3 tbsps butter .
  • 3/4 c sliced tomatoes .
  • 1 1/4 lbs mussels, about 40, scrubbed, debearded .
  • 5 garlic cloves, minced .
  • 1/2 c sliced green onions

Directions
  • Step #1 Melt butter in heavy large pot over medium-high heat.
  • Step #2 Add garlic; sauté until fragrant, about 1 min.
  • Step #3 Mix in tomatoes, then next 5 ingredients.
  • Step #4 Add mussels.
  • Step #5 Cover up & steam until mussels open, about 7 mins (discard any mussels that do not open).
  • Step #6 Transfer mussels to large bowl.
  • Step #7 Simmer sauce uncovered until slightly reduced, about 3 mins.
  • Step #8 Spice up with salt & pepper.
  • Step #9 Pour sauce over mussels & serve.
