Moroccan Ramadan Couscous With Meat And Veggies Recipe

Ingredients
  • 1 tsp pepper .

  • Caramelized Onion Topping .
  • 1 yellow squash, quartered .
  • 1 medium potato, peeled & quartered .
  • 1 tsp cinnamon .
  • 1 tsp coriander .
  • 2 tsps salt .
  • 2 tsps ginger .
  • 1 (16 oz) can chickpeas .
  • 1 tsp turmeric .
  • 1 tsp paprika .
  • 1/4 c butter .
  • 2 c dry couscous .
  • 3 c water .
  • 1 zucchini, quartered .
  • Couscous .
  • 2 tbsps olive oil .
  • 1 tsp cumin .
  • 2 lbs lamb or chickens .
  • Stew .
  • 1 pinch saffron .
  • 1 onion, sliced .
  • 2 carrots, quartered .
  • 1 tsp minced garlic .
  • 3/4 c brown sugar .
  • 1 onion, minced .
  • 1 c tomato sauce .
  • 2 tbsps olive oil .
  • 1/2 red bell pepper, minced .
  • 4 tsps chicken base .
  • 4 c water

Directions
  • Step #1 Mix all spices in a dish & set aside.
  • Step #2 Chop meat into large chunks.
  • Step #3 Heat oil.
  • Step #4 Brown meat on all sides for 5 mins.
  • Step #5 Add onion & garlic.
  • Step #6 Sauté for 5 more mins.
  • Step #7 Add water, spices, & tomato sauce.
  • Step #8 Cook for 5 mins.
  • Step #9 Add carrots & potato pieces.
  • Step #10 Cook for 10 mins.
  • Step #11 Add zucchini & bell pepper to stew.
  • Step #12 Cook for 20 mins.
  • Step #13 Add the chickpeas & cook last 5-10 mins.
  • Step #14 Meanwhile, prepare onion topping.
  • Step #15 Sauté onions to a light brown color.
  • Step #16 Add rest of topping ingredients & cook till caramelized & bubbly.
  • Step #17 Set aside.
  • Step #18 Boil the water for couscous.
  • Step #19 Add chicken base & butter.
  • Step #20 Add couscous.
  • Step #21 Make sure this is the last part of the recipe you make.
  • Step #22 Once the couscous is added, leave it alone for 5 mins.
  • Step #23 Fluff couscous with fork.
  • Step #24 Time to eat! Serve any way you like.
  • Step #25 I plate the cousouse & top it with as much or as little stew as I want.
  • Step #26 Then I add the vegies that I want & top it all off with the sweet onion/raisin topping.
