Ingredients
1/4 c margarine
1/4 tsp salt
2 stalks celery, sliced
1/2 small onion, sliced
1 (4 lb) whole chicken, cut into 8 pieces
1/4 tsp baking soda
salt & pepper to taste
3 c all-purpose flour
1 tbsp seasoning salt, or to taste
3 1/2 quarts water
1 tsp poultry seasoning
2 tbsps shortening
1 c ice water
Directions
Step #1 In a large bowl, sift flour, baking soda & salt.
Step #2 Cut in shortening until mixture resembles coarse crumbs.
Step #3 Stir in water until mixture forms a ball.
Step #4 Divide dough in half & shape into balls.
Step #5 Wrap in plastic & put in the fridge for 2 hrs or overnight.
Step #6 Remove the skin from the breast, thigh & back of the chicken, but leave it on the legs & wings.
Step #7 Spice up chicken with seasoning salt, & place this in a large stock pot.
Step #8 Pour in water.
Step #9 Add onion, celery & margarine.
Step #10 Bring to a boil, then reduce heat to simmer.
Step #11 Cook for about 1 1/2 hrs, until chicken falls off the bone.
Step #12 On a lightly floured surface, roll one ball of dough to about 1/8 inch thick.
Step #13 Cut into 2 inch squares.
Step #14 Drop into simmering broth, & let cook for about 2 mins.
Step #15 Stir carefully to prevent sticking; add more water if needed.
Step #16 Spice up broth while dumplings are cooking with salt, pepper & poultry seasoning.
Step #17 Simmer for about 15 mins, or until dumplings are cooked through.
