Blueberry Trifle Recipe

Ingredients
  • For the Custard .
  • 1 liter milk .
  • 2 eggs .
  • For decoration .
  • 60 g butter .
  • 4 tbsps cornflour .
  • 1 tsp vanilla essence .
  • 1 swiss roll .
  • For the Trifle .
  • 1-2 tsp gelatin .
  • 150 g cherries or blueberries .
  • 6 tbsps sugar

Directions
  • Step #1 For the trifle:.
  • Step #2 Cut up swiss roll & place this in the bottom of a jelly mould.
  • Step #3 Set aside.
  • Step #4 For the Custard:.
  • Step #5 Mix a little milk with cornflour to make paste.
  • Step #6 Add rest of milk, sugar, vanilla.
  • Step #7 Beat egg & add to milk mixture.
  • Step #8 Add butter.
  • Step #9 Put on stove over med-heat/flame & mix with wooden spoon until butter is melted & custard thickens.
  • Step #10 When thickening starts, ensure sides & base are constantly scraped.
  • Step #11 When custard is nice & thick, remove this from heat & leave to cool about 15-20 mins.
  • Step #12 Add gelatine.
  • Step #13 Pour over Swiss roll & put in the fridge overnight, or until set.
  • Step #14 Decorate with cherries or blueberries on the top or in the middle, if using & ringform jelly mould.
