Ingredients
  • 1 c bean sprouts, rinsed .
  • 1/2 tsp chili oil .
  • 1 c sliced cucumbers, peeled & seeded if necessary .
  • 1/4 c rice vinegar .
  • 1 tbsp sliced fresh cilantro .
  • 1/4 c vegetable oil .
  • 12-16 oz leafy salad greens .
  • 1 lime, cut into wedges .
  • 2 c sliced fresh apricots .
  • 2 tbsps coarsely sliced peanuts .
  • 2 tsps sugar .
  • 2 c sliced cooked chicken

Directions
  • Step #1 In a large bowl, mix apricots & next 3 ingredients; set aside.
  • Step #2 In a small bowl, mix vinegar, cilantro, & sugar; whisk in oils.
  • Step #3 Toss salad with vinaigrette & arrange on plates that have been lined with salad greens.
  • Step #4 Sprinkle top with peanuts & garnish with lime wedges.
