Red Bean Soup Recipe

Ingredients
  • 600 ml vegetable stock .
  • 1 tsp chili powder .
  • 400F g peeled plum tomatoes .
  • 1 bay leaf .
  • 1/4 tsp dried rosemary .
  • 2 garlic cloves, sliced .
  • 1/4 tsp dried thyme .
  • 1 carrot, sliced .
  • 1/4 tsp cayenne pepper .
  • 1200 ml water .
  • 2 tbsps tomato puree .
  • 250 g red kidney beans, drained & rinsed .
  • 1 red pepper, deseeded & sliced .
  • 3 tbsps vegetable oil .
  • 1 onion, sliced

Directions
  • Step #1 Heat oil in a pan & fry the garlic, pepper, onion & carrot for 5 mins.
  • Step #2 Add cayenne, chilli powder, thyme, rosemary & bay leaf.
  • Step #3 Stir well & add water & stock.
  • Step #4 Add beans, purée & tomatoes & give it all a good stir this to break up the tomatoes.
  • Step #5 Bring to boil & then simmer partially covered for 75 mins, skimming off any froth that may form.
  • Step #6 Remove bay leaf & liquidise, sieve into a pan & season well.
  • Step #7 If needed thin with a little water & reheat.
