Pork Tenderloin With Sherry-mushroom Sauce Recipe

Ingredients
  • 1/3 c water .
  • 1/2 tsp beef bouillon granules .
  • 1 tbsp dry sherry .
  • 1 dash black pepper .
  • 1 1/2 c fresh mushrooms (sliced) .
  • 1 tbsp sliced fresh parsley .
  • 1 (1-1 1/2 lb) pork tenderloins .
  • 1 garlic clove, minced .
  • 1 tbsp cornstarch .
  • 2 tbsps sliced green onions .
  • 1 tbsp butter or margarine .
  • 1/2 tsp dried thyme leaves, crushed

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Place pork on rack in shallow baking pan.
  • Step #3 Insert meat thermometer into thickest part of tenderloin.
  • Step #4 Roast, uncovered, 25 to 30 mins, or until thermometer registers 159°F Let stand, covered 5 to 10 mins while preparing sauce.
  • Step #5 Cook & stir mushrooms, green onion & garlic in butter in small saucepan over med-heat/flame until vegetables are tender.
  • Step #6 Stir in cornstarch, parsley, thyme & pepper.
  • Step #7 Stir in water, sherry & bouillon grandules.
  • Step #8 Cook & stir until sauce boils & thickens.
  • Step #9 Cook & stir 2 mins more.
  • Step #10 Slice pork & serve this with sauce.
  • Step #11 *Shitake mushrooms can be used in place of the regular mushrooms.
