Bit-of-irish Cheesecake Recipe

Ingredients
  • 3 tbsps butter or margarine, melted .
  • 1 c sour cream .
  • 4 (8 oz) packages Philadelphia Cream cheese, softened .
  • 1/4 c irish cream .
  • 1 1/2 c finely sliced Planters pecans .
  • 4 eggs .
  • 1 c sugar .
  • 2 tbsps sugar .
  • 3 tbsps flour

Directions
  • Step #1 PREHEAT oven to 325°F if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan).
  • Step #2 Mix pecans, 2 tbsps sugar & the butter; press firmly onto bottom of pan.
  • Step #3 Bake 10 min BEAT cream cheese, 1 c sugar & the flour in large bowl with electric mixer on medium speed until well mixed.
  • Step #4 Add sour cream & liqueur; mix well.
  • Step #5 Add eggs, 1 at a time, mixing on lowish speed after each addition just until mixed.
  • Step #6 Pour over crust.
  • Step #7 BAKE 1 hr 5 min or until center is almost set.
  • Step #8 Run small knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan.
  • Step #9 Refrigerate 4 hrs or overnight.
  • Step #10 Store leftover cheesecake in refrigerator.
  • Step #11 Celebrate St.
  • Step #12 Patrick's Day by garnishing chilled cheesecake with green colored sugar just before serving.
  • Step #13 Or, sprinkle the green colored sugar over a clover-shaped template placed on top of chilled cheesecake to resemble a shamrock.
