Ingredients
1/2 c white sugar, divided
1 c half-and-half cream
1 vanilla bean, halved lengthwise
4 egg yolks
2 tbsps unsalted butter
Directions
Step #1 In a saucepan over med-heat/flame, mix half-and-half, 1/4 c sugar & vanilla bean.
Step #2 In a bowl, whisk together egg yolks & remaining 1/4 c sugar until smooth.
Step #3 When cream mixture comes just to a boil, remove this from heat & remove vanilla bean.
Step #4 Whisk a small amount of hot cream into the egg yolk mixture, then pour egg yolk mixture into remaining hot cream & whisk until smooth.
Step #5 Return to medium heat & cook, stirring, until mixture coats the back of a metal spoon.
Step #6 Remove from heat & stir in the butter.
Step #7 Serve warm or cold.
