Cherry Almond Pilaf Recipe

Ingredients
  • 1 c basmati rice, rinsed & drained .
  • 2 tbsps sugar .
  • 2 c vegetable broth .
  • 2/3 c water .
  • 2 tbsps butter .
  • 3 tbsps sliced almonds, lightly toasted .
  • 1 c tart cherries .
  • 1 tsp ground cilantro

Directions
  • Step #1 Pit cherries over a medium saucepan to save as much juice as possible.
  • Step #2 Once pitted, heat cherries, water & sugar to a boil.
  • Step #3 Reduce heat & let simmer cherry mixture for 20 mins.
  • Step #4 Drain cherries, reserving juice in a clear glass measuring c.
  • Step #5 Save cherries for later.
  • Step #6 Add enough vegetable broth to the cherry juice to equal 2 c of liquid.
  • Step #7 Set cherry/broth liquid aside & discard leftover vegetable broth.
  • Step #8 Melt butter In a large-ish skillet.
  • Step #9 Add rice & stir this to coat in melted butter.
  • Step #10 Pour in the cherry juice/vegetable broth mixture & bring to a boil over medium high heat.
  • Step #11 Cover up & reduce heat to low.
  • Step #12 Simmer for 15-20 mins until rice is tender & all of the liquid is absorbed.
  • Step #13 Check the skillet every once in awhile & stir this to make sure that the rice doesn’t stick to the bottom.
  • Step #14 Remove from heat, fluff with a fork, fold in cherries & cilantro.
  • Step #15 Transfer to a serving dish & sprinkle with toasted almonds.
