Gluten Free Chocolate Crinkle Cookies-for Passover! Recipe

Ingredients
  • 4 eggs .
  • 2 c potato starch .
  • 2 c sugar .
  • 2 c powdered sugar, for rolling cookies .
  • 3/4 c cocoa .
  • 2 tsps vanilla .
  • 2 tsps baking powder .
  • 3/4 c oil

Directions
  • Step #1 With a hand mixer, oil, mix together the cocoa, & sugar.
  • Step #2 Beat in eggs, one at a time.
  • Step #3 Add vanilla.
  • Step #4 Add in potato starch & baking powder, & mix until the batter resembles thick paste.
  • Step #5 Chill batter several hrs or overnight covered in fridge.
  • Step #6 If very liquidy after it's been chilled, you may need to add a bit more potato starch.
  • Step #7 Preheat oven to 350F/ 180C.
  • Step #8 Roll batter into balls, then roll each cookie ball in the powdered sugar until well coated.
  • Step #9 Space evenly apart on a lined cookie sheet.
  • Step #10 Bake for 10-15 mins until just starting to crinkle.
  • Step #11 Let the cookies cool off on the baking sheets for five mins.
  • Step #12 Then remove carefully with a spatula.
  • Step #13 They spread out a lot & are delicate to handle.
  • Step #14 Freezes well.
