Coconut Yam Curry Soup Recipe

Ingredients
  • 3 medium yams, baked (or sweet potatoes) .
  • 1 tbsp butter or margarine or oil, for sautaeing .
  • 1 vegetable bouillon cube .
  • 1 tsp curry powder (or more to taste) .
  • 7 oz light coconut milk (or more to taste) .
  • sliced cilantro (optional) .
  • 6 garlic cloves .
  • 1 tsp black pepper .
  • 1 1/2 c low-fat soy milk or milk .
  • 1/2 onion

Directions
  • Step #1 Chop onions & garlic & sauté in butter In a large-ish saucepan until onions are translucent but not brown.
  • Step #2 Meanwhile puree yams one at a time in a mixer with ½ c soymilk each & add to saucepan.
  • Step #3 Add bouillon, curry powder, pepper & coconut milk & heat until bouillon is incorporated, five to ten mins.
  • Step #4 Garnish with cilantro & serve this with naan bread or Rycrisp.
