All-in-one-pan Roast And Vegetables Recipe

Ingredients
  • 3/4 lb new potatoes .
  • 3/4 tsp thyme .
  • 2 yellow bell peppers .
  • 2 tbsps olive oil .
  • 5 garlic cloves, peeled (3 left whole & 2 cut into 12 slivers) .
  • 2 1/2 lbs eye of round roast .
  • 3 red bell peppers .
  • coarse salt .
  • pepper .
  • 2 medium onions

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Remove ribs & seeds from peppers, & cut into 1-inch strips or pieces.
  • Step #3 Halve onions & cut into 1-inch wedges.
  • Step #4 Scrub potatoes & cut into 1-inch chunks.
  • Step #5 Place peppers, potatoes, onions, & whole garlic cloves on a large rimmed baking sheet.
  • Step #6 Drizzle with 1 tbsp of oil.
  • Step #7 Spice up with salt & pepper, & toss to coat.
  • Step #8 Using a paring knife, make 12 small slits in top & sides of roast; push in garlic slivers.
  • Step #9 Move vegetables to sides of sheet.
  • Step #10 Place beef in center, & coat with remaining oil; rub all over with 1 1/2 tsps coarse salt, 1/2 tsp pepper, & 3/4 tsp thyme.
  • Step #11 Roast 40 to 50 mins, tossing vegetables every once in awhile until tender.
  • Step #12 Let meat stand 10 mins, loosely tented with aluminum foil wrap to keep warm.
  • Step #13 Serve.
