Nanay's Filipino Fried Chicken Recipe

Ingredients
  • 1 c distilled white vinegar (or cane vinegar is better if you can get hold of one) .
  • 3/4 c soy sauce .
  • 1 tsp whole black peppercorns, crushed lightly .
  • 2 bay leaves .
  • oil, for deep-frying .
  • 1 1/2 c water .
  • 1 (2-3 lb) whole chickens (cut into serving pieces or you can use just thighs or just drumsticks or just wings... J) .
  • 4 garlic cloves, crushed

Directions
  • Step #1 In a large pan mix the chicken, garlic, peppercorns, soy sauce,bay leaves, vinegar & water & bring to a boil.
  • Step #2 Simmer uncovered over low heat/flame until chicken is cooked through (25-35 mins).
  • Step #3 Remove chicken from pan & pat dry.
  • Step #4 In a large skillet heat the oil over med-heat/flame until it is hot but not smoking.
  • Step #5 Then deep fry the chicken in batches until it is brown & the skin looks crispy.
  • Step #6 (NOTE: Make sure you pat them dry as it spits!).
  • Step #7 Serve with rice.
