Tropical Fruit Bars Recipe

Ingredients
  • 1/2 c brown sugar, packed .
  • 1 c dried mango, sliced .
  • 2 tbsps all-purpose flour .
  • 3 tbsps rum .
  • 1 tbsp rum .
  • Base .
  • 1/2 c butter, softened .
  • 1 c flaked coconut .
  • Icing (optional) .
  • 1/2 c flaked coconut .
  • 1 (300 ml) can sweetened condensed milk .
  • 2 c icing sugar .
  • 1 tbsp milk .
  • 1 1/2 c graham cracker crumbs .
  • 1/2 c butter, melted .
  • Filling .
  • 1 1/2 c cashews, coarsely sliced

Directions
  • Step #1 Grease a 13" x 9" baking pan; set aside.
  • Step #2 To make the base, mixd the crumbs, coconut & sugar in a bowl; stir in the the butter until evenly moistened.
  • Step #3 Press into the prepared pan.
  • Step #4 Bake in the centre of a 325F degree F oven until browned, 15 mins.
  • Step #5 Let cool on a rack.
  • Step #6 In another bowl, stir this together the condensed milk, rum & flour; stir in the the nuts, coconut & mango.
  • Step #7 Spread over the base.
  • Step #8 Bake in the centre of a 325F degree F oven until golden & set, 35 mins.
  • Step #9 Let cool.
  • Step #10 To make the icing, beat the butter, milk & rum together until creamy; beat in the icing sugar in two additions until fluffy.
  • Step #11 Spread over the filling.
  • Step #12 Refrigerate until firm, 1 hr.
