Pumpkin Gingerbread Bars Recipe

Ingredients
  • 2 tbsps molasses .
  • 1 tsp ground ginger .
  • 2 eggs .
  • 1 tbsp confectioners' sugar .
  • 3/4 c solid pack pumpkin .
  • 3/4 c all-purpose flour .
  • 1 tsp ground cinnamon .
  • 1/2 c brown sugar .
  • 1 tsp vanilla extract .
  • 1 tsp baking powder

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Spray a 9" square pan with nonstick coating spray.
  • Step #3 Beat eggs with electric mixer at high speed 2 mins.
  • Step #4 Add brown sugar 1 T at a time, beating well after each addition.
  • Step #5 Add pumpkin, molasses & vanilla.
  • Step #6 Beat at medium speed 12 mins.
  • Step #7 Combine flour, baking powder, cinnamon & ginger, stir this to mix.
  • Step #8 Add to pumpkin mixture.
  • Step #9 Stir well.
  • Step #10 Pour into prepared pan.
  • Step #11 Bake 20 mins or until a wooden pick inserted in center comes out clean.
  • Step #12 Let cool 10 mins in pan.
  • Step #13 Invert onto platter.
  • Step #14 Sprinkle top with confectioner's sugar.
  • Step #15 Serve warm.
