Pumpkin Cookies Recipe

Ingredients
  • 3 1/2 c flour .
  • 5 tbsps brown sugar .
  • 5 tbsps milk .
  • 2 c granulated sugar .
  • 1 tsp ground ginger .
  • 1 1/2 tsps ground nutmeg .
  • 1 tsp salt .
  • 2 tsps baking soda .
  • 2 eggs .
  • powdered sugar, if needed .
  • 1 c shortening .
  • 2 tsps ground cinnamon .
  • 3 tbsps butter .
  • 1/2 tsp ground cloves .
  • 1 c powdered sugar, plus a little extra .
  • 1 c pumpkin puree

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Line baking sheets with parchment paper.
  • Step #3 In a medium bowl, salt, baking soda, whisk together flour, ground nutmeg, ground cinnamon, ground ginger & ground cloves.
  • Step #4 Save for later.
  • Step #5 In a large bowl, using an electric mixer on medium speed, beat shortening & granulated sugar until creamy.
  • Step #6 Add eggs, 1 at a time, beating well after each addition.
  • Step #7 Add pumpkin puree & mix until well mixd.
  • Step #8 Slowly add flour mixture, mixing until mixd.
  • Step #9 Droup rounded tsps of dough 2 inches apart onto prepared cookie sheets & bake for 10 mins; do not overbake.
  • Step #10 Remove from oven, cool on baking sheets for 5 mins & transfer to a wire rack to cool completely.
  • Step #11 To make icing: In a small saucepan over medium heat, mix sugar, butter & milk & bring mixture to a boil.
  • Step #12 Remove from heat, set aside & cool completely, about an hr.
  • Step #13 Stir in powdered sugar until icing is desired consistency, adding more if necessary.
  • Step #14 Ice cookies to taste.
