Herbed Chicken Breasts Recipe

Ingredients
  • 4 (5 oz) boneless skinless chicken breast halves (5 oz each) .
  • 2 tbsps butter, divided .
  • 1 tbsp lemon juice .
  • 1 tbsp minced fresh thyme or 1 tsp dried thyme .
  • 3 tbsps minced fresh chives .
  • 2 tsps Dijon mustard .
  • 1/2 tsp lemon-pepper seasoning .
  • 1/2 tsp salt .
  • 1 tbsp minced fresh basil or 1 tsp dried basil .
  • 1/4 c chicken broth .
  • 2 tbsps olive oil, divided .
  • 1/2 c minced fresh parsley .
  • 1/2 tsp minced garlic

Directions
  • Step #1 Flatten chicken to 1/4-in.
  • Step #2 thickness; sprinkle with lemon-pepper.
  • Step #3 In a large skillet, saute chicken in 1 tbsp each oil & butter for 6-7 mins on each side or until juices run clear.
  • Step #4 Remove & keep warm.
  • Step #5 Add lemon juice & mustard to the skillet; whisk until smooth.
  • Step #6 Whisk in broth, salt, herbs, garlic, & remaining oil & butter; simmer for 1 min.
  • Step #7 Spoon over chicken.
