Herbed Chicken Breasts Recipe

Ingredients

4 (5 oz) boneless skinless chicken breast halves (5 oz each) .
2 tbsps butter, divided .
1 tbsp lemon juice .
1 tbsp minced fresh thyme or 1 tsp dried thyme .
3 tbsps minced fresh chives .
2 tsps Dijon mustard .
1/2 tsp lemon-pepper seasoning .
1/2 tsp salt .
1 tbsp minced fresh basil or 1 tsp dried basil .
1/4 c chicken broth .
2 tbsps olive oil, divided .
1/2 c minced fresh parsley .
1/2 tsp minced garlic

Directions

Step #1 Flatten chicken to 1/4-in.
Step #2 thickness; sprinkle with lemon-pepper.
Step #3 In a large skillet, saute chicken in 1 tbsp each oil & butter for 6-7 mins on each side or until juices run clear.
Step #4 Remove & keep warm.
Step #5 Add lemon juice & mustard to the skillet; whisk until smooth.
Step #6 Whisk in broth, salt, herbs, garlic, & remaining oil & butter; simmer for 1 min.
Step #7 Spoon over chicken.
