Italian Sausage And Tortellini Soup Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 1/2 tsp dried oregano .
  • 1/2 c water .
  • 2 c carrots, thinly sliced .
  • 1 c onions, coarsely sliced .
  • 1/2 tsp dried basil .
  • 1 lb mild Italian sausage .
  • 5 c beef broth .
  • 1 1/2 c sliced zucchini .
  • black pepper, to taste .
  • 2 c tomatoes, peeled, seeded & sliced .
  • 1 (8 oz) can tomato sauce .
  • 3 tbsps fresh parsley, sliced .
  • 1 (9 oz) package put in the fridged basil & cheese tortellini, uncooked .
  • 1 green bell pepper, cut into 1/2-inch pieces .
  • 1/2 c parmesan cheese, freshly grated .
  • salt, to taste

Directions
  • Step #1 Remove & discard casings from the sausage.
  • Step #2 In a large Dutch oven, brown sausage over medium-high heat, stirring every once in awhile.
  • Step #3 Drain, reserving 1 Tablespoon drippings in the pan.
  • Step #4 Set sausage aside.
  • Step #5 Add onion & garlic to the drippings in the pan; cook, stirring constantly, until onion is tender.
  • Step #6 Add sausage, oregano, tomato sauce, carrots, salt, zucchini, & pepper, tomato, beef broth, water, bell pepper, basil, stirring well.
  • Step #7 Bring to a boil; reduce heat, & let simmer, uncovered for 30 mins.
  • Step #8 Add tortellini & parsely, stirring well.
  • Step #9 Bring to a boil; reduce heat, & let simmer, uncovered, 10 mins or until tortellini is tender.
  • Step #10 Adjust spices to taste.
  • Step #11 Ladle soup into individual soup bowls.
  • Step #12 Sprinkle top each serving with cheese.
