Fennel Salsa Recipe

Ingredients
  • 2 tbsps capers, drained & sliced .
  • 3 c finely sliced fennel (about 2 small) .
  • 3 tbsps extra-virgin olive oil .
  • 1 tbsp balsamic vinegar (don't use cider or distilled) .
  • 2/3 c sliced kalamata olives (pitted) .
  • 1 c sliced seeded tomatoes .
  • 1/4 c fresh basil, sliced

Directions
  • Step #1 Combine all ingredients in large bowl; toss to mix.
  • Step #2 Spice up salsa to taste with salt & pepper.
  • Step #3 Cover up salsa & put in the fridge at least 2 hrs & up to 1 day, tossing every once in awhile.
