Savoy Cabbage With Bacon Recipe

Ingredients
  • 1 tbsp finely julienned fresh sage .
  • fresh coarse black pepper, to taste .
  • 1/4 c dry white wine .
  • 4 slices bacon (preferably applewood-smoked) .
  • 2 large garlic cloves, minced .
  • 3 tbsps finely julienned snipped chives or finely julienned scallions .
  • 4 small tender leeks, thinly sliced (split, & rinsed) .
  • 1 1/4 c cooked white beans, rinsed & drained or 1 (15 7/8 oz) can white beans, rinsed & drained .
  • crushed red pepper flakes, to taste .
  • 1 c low sodium chicken broth .
  • 1 large savoy cabbage, thinly sliced (core removed)

Directions
  • Step #1 Cook bacon in 12-inch non-stick skillet over medium-high heat until crisp, about 3 mins.
  • Step #2 Use slotted spoon to set bacon aside; place on paper towelling.
  • Step #3 Drain off all but 2 tbsps fat.
  • Step #4 Add garlic, crushed red pepper, & leeks to skillet.
  • Step #5 Cook until fragrant, about 2 mins.
  • Step #6 Add cabbage, chicken stock, white wine & beans.
  • Step #7 Gently toss to mix.
  • Step #8 Simmer until cabbage is just beginning to wilt, about 3 mins.
  • Step #9 Crumble bacon.
  • Step #10 Toss cooked mixture with bacon, sage, chives or scallions & pepper.
  • Step #11 Adjust seasoning.
