Scallion Skillet Cornbread Recipe

Ingredients
  • 8 scallions, white & tender green parts only, thinly sliced .
  • 1/3 c corn oil, plus .
  • 1 1/4 c low-fat milk .
  • 2 tsps baking powder .
  • 2 tbsps honey .
  • 2 large eggs, beaten .
  • 1 c coarse stone-ground yellow cornmeal .
  • 1 tbsp corn oil .
  • 1 1/3 c all-purpose flour .
  • 1 pinch fresh ground pepper .
  • 1 tsp salt

Directions
  • Step #1 Preheat the oven to 400°.
  • Step #2 Place a 10-inch cast-iron skillet in the oven to heat.
  • Step #3 In a medium bowl, baking powder, whisk the flour, cornmeal, salt & pepper.
  • Step #4 In a small bowl, whisk the milk, honey, eggs & 1/3 c of the oil.
  • Step #5 Add the wet ingredients to the cornmeal mixture & whisk just until mixd.
  • Step #6 Stir in the scallions.
  • Step #7 Add the remaining 1 tbsp of oil to the hot skillet & swirl to coat.
  • Step #8 Pour the batter into the skillet & bake for about 30 mins, until the top is golden & a toothpick inserted in the center comes out clean.
  • Step #9 Let cool slightly, then turn the corn bread out onto a plate.
  • Step #10 Invert it onto a rack to cool.
  • Step #11 Alternatively, serve the cornbread hot from the skillet.
