Grilled Scallops With Black Beans Recipe

Ingredients
  • vegetable oil cooking spray .
  • 1/4 tsp ground red pepper .
  • 1 tsp balsamic vinegar .
  • 2 tsps garlic, minced .
  • 1 1/4 tsps ground cumin .
  • 1/2 c red bell peppers, minced .
  • 1/2 tsp ground cumin .
  • 1 lb sea scallops .
  • 1 tsp olive oil .
  • 2 c canned black beans, drained .
  • 1 c onions, sliced

Directions
  • Step #1 Place scallops in shallow dish.
  • Step #2 Combine olive oil, ground red pepper; drizzle over scallops, 1/2 tsps cumin, & toss carefully.
  • Step #3 Cover up & marinate in the refrigerator 30 mins, stirring every once in awhile.
  • Step #4 Coat a large non-stick skillet with cooking spray; place over medium-high heat unitl hot & add onion & garlic & saute until tender.
  • Step #5 Add bell pepper & saute until tender.
  • Step #6 Stir in black beans & 1/2 tsps cumin; saute 3 mins or until thoroghly heated.
  • Step #7 Remove from heat; stir in the vinegar & keep warm.
  • Step #8 Remove scallops from marinade; discarding marinade, thread scallops onto 4 (8 inch) skewers.
  • Step #9 Coat grill rack with cooking spray; place over medium coals (300-350 degrees).
  • Step #10 Place skewers on rack; grill, uncovered, 3 mins on each side or until scallops are opaque.
  • Step #11 Spoon black bean mixture evenly onto individual serving plates.
  • Step #12 Arrange grilled scallops evenly over black bean mixture.
  • Step #13 Serve as soon as possible.
