Sweet And Sour Roasted Onions Recipe

Ingredients
  • salt, to taste .
  • fresh ground black pepper, to taste .
  • 2 tbsps olive oil .
  • 3 tbsps light muscovado sugar .
  • 1 stick celery, finely sliced (optional) .
  • 1 garlic clove, finely sliced .
  • 1 lb small red onions or shallots, peeled & cut in halve .
  • 1 tbsp concentrated tomato paste (puree in the UK) .
  • 3 tbsps cider vinegar .
  • 1 tsp fresh rosemary, finely sliced

Directions
  • Step #1 Preheat your oven to 190°C/375°F/Gas 5.
  • Step #2 Put your onions in an oven dish that will fit them neatly in one layer.
  • Step #3 You might want to line the dish with baking paper, as the sauce will caramelise, which can make it quite a pain to clean.
  • Step #4 Heat the oil in a frying pan & sautee the celery over med-heat/flame until soft, for about 5 mins.
  • Step #5 If you're not using any celery, just start with the next step, but shorten the frying time to two mins.
  • Step #6 Add the garlic & sautee for a further five mins.
  • Step #7 Remove the pan from the heat & add all the other ingredients, apart from the onions & stir until the sugar has dissolved.
  • Step #8 Spice up liberally with salt & pepper & pour the mixture over the onions.
  • Step #9 Mix well until all the onions are coated evenly.
  • Step #10 Place in your oven & roast for about one hr, stirring once halfway through.
  • Step #11 You might want to check after 45 mins, the onions are done, when they are soft & caramelised.
  • Step #12 The time depends a bit on their size.
