Spiced Beef Stew With Carrots And Mint Recipe

Ingredients
  • pepper, to taste .
  • 3 large shallots, sliced .
  • 2 tbsps olive oil, divided .
  • 2 tsps ground cumin .
  • salt, to taste .
  • 2 1/2 c beef broth .
  • 1/4 c fresh mint, sliced .
  • 1 tbsp flour .
  • 1 lb beef tenderloin, cut into 1 inch cubes .
  • 1 1/2 tsps pumpkin pie spice .
  • 8 oz baby carrots, peeled .
  • 1/8 tsp cayenne pepper

Directions
  • Step #1 Heat 1 tbsp of oil in skillet.
  • Step #2 Sprinkle top beef with salt & pepper.
  • Step #3 Add beef to skillet, saute until done; Transfer to a bowl.
  • Step #4 Add remaining 1 tbsp oil, shallots & carrots & saute until golden.
  • Step #5 Add the cumin, pumpkin pie spice & the cayenne pepper; stir, sprinkle flour over it & stir again.
  • Step #6 Now stir in the the broth & bring to a boil; reduce heat to medium.
  • Step #7 Simmer until carrots are tender, about 8 mins.
  • Step #8 Return beef to skillet; cook this until sauce thickens, about 1 min.
  • Step #9 Spice up stew to taste with salt & pepper.
  • Step #10 Stir in 1/4 c sliced mint.
  • Step #11 Serve with couscous.
