Cranberry Jumbles Recipe

Ingredients
  • 2 tbsps cranberry juice or orange juice .
  • 3/4 tsp baking powder .
  • 1 c sifted powdered sugar .
  • Orange Frosting .
  • 1/2 tsp finely shredded orange peel .
  • 1/2 c shortening .
  • 1/8 tsp baking soda .
  • 1 c dried cranberries .
  • 3-4 tsps orange juice .
  • 1/2 tsp ground cinnamon .
  • 1/2 c slivered almonds .
  • 1 egg, beaten .
  • 1 c all-purpose flour .
  • 1/3 c whole wheat flour .
  • 3/4 c packed brown sugar

Directions
  • Step #1 In a big mixing bowl, brown sugar, baking soda, baking powder, stir the flours, & cinnamon together.
  • Step #2 Using a pastry mixer, cut in shortening until mixture resembles fine crumbs.
  • Step #3 In another bowl, mix the egg & juice; stir in theto flour mixture.
  • Step #4 Stir in cranberries & almonds.
  • Step #5 Drop dough by rounded tsps 2 inches apart onto an ungreased cookie sheet.
  • Step #6 Bake at 350° for 12-14 mins or until bottoms are lightly browned.
  • Step #7 Transfer cookies to a wire rack & let cool.
  • Step #8 Orange Frosting: in a small bowl, stir the powdered sugar, orange peel, & enough orange juice to make drizzling consistency.
  • Step #9 Drizzle frosting over cookies; let frosting dry.
  • Step #10 To store: place this in layers separated by waxed paper in an airtight container; cover; store at about room temp up to 3 days or freeze undrizzled cookies up to 3 months; thaw cookies, then drizzle.
