Fast Summer Berry Pudding Recipe

Ingredients

1 tsp vanilla extract .
2 medium size eggs (I used large ones & it tasted a bit "eggy") .
100 g soft butter .
100 g self raising flour .
100 g frozen mixed berries (or Forest Fruits) .
100 g caster sugar

Directions

Step #1 Mix everything except fruit to a batter using a mixer or food processor/blender.
Step #2 Stir in fruit.
Step #3 Put into a greased 1 litre pudding basin.
Step #4 Cover up with cling film & microwave on full power for 8 mins.
Step #5 Leave to rest for a min or two.
Step #6 Serve with hot custard.
