Step #1 1: in Wok (or large pan) fry the bacon until crispy, remove this from pan with a slotted spoon & set aside.
Step #2 2: Fry the Onion, Garlic & Celery in the Bacon Fat until the onions are golden brown remove with slotted spoon & set aide.
Step #3 3: Fry the Mushrooms in the bacon fat for around 2 mins, remove with a slotted spoon & set aside.
Step #4 4: Discard the Bacon fat, wipe the Wok & fry the minced steak in batches until well browned.
Step #5 5:Once the last batch of Minced Steak is browned return the rest of the Minced steak & the bacon, Tomato paste, stir in the the Chopped tomato, Onion, Red wine & Worcestershire sauce, Celery, Mushrooms & Garlic to the Wok, Chicken Stock, bring the sauce to a simmer.
Step #6 6: Stir in the Sweetcorn, Honey, Oregano, Cayenne pepper, Nutmeg & simmer on a low heat for at least 3 hrs adding a little more chicken stock if required.
Step #7 7: At the end of the cooking time stir in the the cream & let the bolognese stand for 5 mins before serving.
Step #8 8: Serve over your pasta or baked potato & sprinkle with Parmesan cheese.
Step #9 NOTE: This is also good cooked in a Crockpot on low heat for 10 to 12 hrs but you will need to cut down on the Chicken stock.
