Quick And Easy Spring Vegetable Orzo Recipe

Ingredients
  • salt .
  • 1 c sliced mushrooms .
  • 32 oz chicken broth or vegetable broth .
  • 1 c grated parmesan cheese (plus more for table) .
  • 1/2 c green peas .
  • 1 1/2 c orzo pasta .
  • fresh ground black pepper .
  • 1 c sliced baby carrots .
  • sliced parsley .
  • 4 tbsps unsalted butter .
  • 1 small onion, finely sliced

Directions
  • Step #1 Melt butter In a large-ish heavy saucepan.
  • Step #2 Sauté onions & mushrooms until tender but not browned.
  • Step #3 Add orzo & stir this to coat.
  • Step #4 Add carrots, peas & broth.
  • Step #5 Bring to boil & cook this until orzo is tender, about 5 mins.
  • Step #6 Remove from heat, stir in the Parmesan & cover.
  • Step #7 Let rest 5-8 mins.
  • Step #8 Sprinkle top with parsley & season this with salt & pepper.
