Poppy Seed Loaf With Lemon Icing Recipe

Ingredients
  • ICING .
  • 3 eggs .
  • 3 c icing sugar .
  • 1/3 c butter .
  • 2 c flour .
  • 1 tbsp poppy seeds, to sprinkle on top .
  • 4 tsps milk or cream .
  • 2/3 c butter .
  • 1/3 c poppy seeds .
  • 1 tbsp grated lemon rind .
  • 1 tsp salt .
  • 2/3 c milk .
  • 4 tsps lemon juice .
  • 1 tsp baking powder .
  • 1 tsp vanilla .
  • 1 tbsp lemon juice .
  • 1 grated lemon, rind of .
  • 1 1/4 c sugar

Directions
  • Step #1 Soak poppy seeds in milk for 2 hrs or overnight.
  • Step #2 Cream butter & sugar until light & fluffy.
  • Step #3 Beat in eggs one at a time.
  • Step #4 Beat in vanilla, lemon rind, & juice.
  • Step #5 Combine flour, salt, & baking powder.
  • Step #6 Add to creamed mixture alternately with poppy seed mixture.
  • Step #7 Turn into 9x5" loaf pan.
  • Step #8 Bake in 300F oven for 1 1/2 hrs.
  • Step #9 Let cool for 15 min & remove cake from pan.
  • Step #10 Cool on wire rack & ice.
