Ingredients
4 curly leaf lettuce leaves .
1/4 c basil leaves .
1/4 c cornmeal .
Italian bread, cut in half lengthwise & toasted .
2 tbsps capers .
4 soft-shell crabs, cleaned .
4 slices red onions .
2 yellow bell peppers .
1/3 c light mayonnaise .
1 tbsp salt-free cajun seasoning .
1/4 tsp salt .
2 garlic cloves, peeled .
1 tbsp vegetable oil
Directions
Step #1 Note Onion should be 1/4 inch thick.
Step #2 Crabs should weigh 5 to 6 oz each.
Step #3 Preheat broiler.
Step #4 Blacken the green peppers by cutting in half, remove seeds & membranes, place on baking sheet & under broiler.
Step #5 After you have blackened place this in a zip-top plastic bag; seal.
Step #6 Let stand 15 mins.
Step #7 Peel.
Step #8 Process in a food processor/blender bell pepper, capers, mayonnaise, salt, basil, & garlic until smooth.
Step #9 Over med high heat the oil.
Step #10 Sprinkle top crabs with Cajun seasoning.
Step #11 Dredge crabs in cornmeal.
Step #12 Add crabs to pan; cook 3 mins on each side, carefully pressing body & legs against pan.
Step #13 Spread 1 tbsp sauce evenly over each slice of bread.
Step #14 Arrange 1 crab over each bottom half of bread.
Step #15 Top each crab with 1 lettuce leaf & 1 red onion slice.
Step #16 Cover up with top halves of bread.
