Cajun Soft Shell Crab Sandwich With Yellow Pepper And Cap Recipe

Ingredients
  • 4 curly leaf lettuce leaves .
  • 1/4 c basil leaves .
  • 1/4 c cornmeal .
  • Italian bread, cut in half lengthwise & toasted .
  • 2 tbsps capers .
  • 4 soft-shell crabs, cleaned .
  • 4 slices red onions .
  • 2 yellow bell peppers .
  • 1/3 c light mayonnaise .
  • 1 tbsp salt-free cajun seasoning .
  • 1/4 tsp salt .
  • 2 garlic cloves, peeled .
  • 1 tbsp vegetable oil

Directions
  • Step #1 Note Onion should be 1/4 inch thick.
  • Step #2 Crabs should weigh 5 to 6 oz each.
  • Step #3 Preheat broiler.
  • Step #4 Blacken the green peppers by cutting in half, remove seeds & membranes, place on baking sheet & under broiler.
  • Step #5 After you have blackened place this in a zip-top plastic bag; seal.
  • Step #6 Let stand 15 mins.
  • Step #7 Peel.
  • Step #8 Process in a food processor/blender bell pepper, capers, mayonnaise, salt, basil, & garlic until smooth.
  • Step #9 Over med high heat the oil.
  • Step #10 Sprinkle top crabs with Cajun seasoning.
  • Step #11 Dredge crabs in cornmeal.
  • Step #12 Add crabs to pan; cook 3 mins on each side, carefully pressing body & legs against pan.
  • Step #13 Spread 1 tbsp sauce evenly over each slice of bread.
  • Step #14 Arrange 1 crab over each bottom half of bread.
  • Step #15 Top each crab with 1 lettuce leaf & 1 red onion slice.
  • Step #16 Cover up with top halves of bread.
