Sun-dried Tomato & Parsley Damper Recipe

Ingredients
  • 1 pinch salt .
  • 1 1/2 c self-raising flour .
  • 1/3 c sun-dried tomatoes, well drained & sliced .
  • 3/4 c low-fat milk .
  • 1/3 c parsley, finely sliced

Directions
  • Step #1 Preheat oven to 200°C.
  • Step #2 Lightly grease a baking tray.
  • Step #3 Combine flour, tomato, parsley & a pinch of salt in a bowl.
  • Step #4 Stir in enough milk to form a soft, not sticky dough.
  • Step #5 Turn onto a lightly floured surface;knead briefly.
  • Step #6 Shape into a 12cm round on tray.
  • Step #7 Lightly brush with milk.
  • Step #8 Bake 15-20 mins until golden & a skewer inserted at centre comes out clean.
