Cherry Mustard Chicken Recipe

Ingredients
  • 1/4 c sliced green onions .
  • 1 1/2 lbs boneless skinless chicken .
  • flour .
  • 2 tbsps balsamic vinegar .
  • 1/4 c Dijon mustard .
  • 3 tbsps butter .
  • 1 c white wine .
  • 2 tbsps cornstarch .
  • 1 tbsp water .
  • salt & black pepper .
  • 1 c chicken broth .
  • 2 c pitted sweet cherries .
  • 3 tbsps olive oil

Directions
  • Step #1 Sprinkle top chicken with salt & pepper, then lightly toss in flour; shake off excess.
  • Step #2 Heat half the butter & oil in large skillet over med-heat/flame; add half the chicken.
  • Step #3 Cook 8 to 10 mins, turning every once in awhile, until chicken is golden & cooked through.
  • Step #4 Remove to platter & keep warm.
  • Step #5 Repeat with remaining butter, oil & chicken.
  • Step #6 Stir wine, chicken broth & mustard into skillet, scraping up browned bits.
  • Step #7 In small bowl, mix cornstarch, vinegar & water; stir in theto skillet.
  • Step #8 Add cherries & boil mixture, stirring until sauce thickens; 1 to 2 mins.
  • Step #9 Stir in green onion.
  • Step #10 Pour sauce over chicken & serve.
