Chicken And Artichoke Stroganoff Recipe

Ingredients
  • 1 c onions, sliced .
  • 2 garlic cloves, minced .
  • hot cooked rice or noodles .
  • 2 tbsps mixed Italian herbs, divided (or more to taste) .
  • 13 oz water-packed artichoke hearts, undrained .
  • 1/4 c all-purpose flour .
  • 2-3 tbsps olive oil .
  • 8 oz nonfat sour cream .
  • 4 boneless skinless chicken breast halves, cubed .
  • 1/2 c boiling water

Directions
  • Step #1 Drain artichoke hearts, reserving 1/3 c liquid, & set the artichoke hearts aside.
  • Step #2 Add enough olive oil to reserved liquid to make 1/2 c.
  • Step #3 Stir in 1 Tbsp herbs.
  • Step #4 In a large skillet over medium-high heat, sauté garlic in 1 Tbsp olive oil until garlic just begins to turn white (do not brown).
  • Step #5 Add onion & cook this until just beginning to turn transparent (again, do not brown).
  • Step #6 Add chicken & 1/4 c oil-herb mixture; cook this until chicken is browned.
  • Step #7 Meanwhile, mix flour & remaining herbs in a small bowl & stir well.
  • Step #8 Add the flour mixture to remaining oil-herb mixture & stir until smooth.
  • Step #9 Pour over chicken.
  • Step #10 Stir to mix; add boiling water & stir.
  • Step #11 Bring mixture to a boil & cover, reduce the heat, & let simmer 4-5 mins or until chicken is done.
  • Step #12 Remove from heat.
  • Step #13 Stir in the reserved artichoke hearts & sour cream & heat through.
  • Step #14 Serve over hot rice or noodles.
