Creamy Zucchini With Linguine Recipe

Ingredients
  • 2 cloves garlic, thinly sliced
  • 2 large zucchini, sliced
  • 1/8 tsp crushed red pepper flakes
  • 1 (12 oz) package linguine pasta
  • 2 tbsps sliced fresh parsley
  • 1/2 c freshly grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 c olive oil
  • 1 c whole milk

Directions
  • Step #1 Warm olive oil in a large skillet over med-heat/flame.
  • Step #2 Add zucchini & garlic to hot oil, & season this with salt & red pepper flakes.
  • Step #3 Cook, turning every once in awhile, until zucchini are well browned on all sides, about 20 mins.
  • Step #4 Meanwhile, bring a large pot of generously salted water to boil.
  • Step #5 Add pasta, & cook this until al dente, about 8 to 10 mins.
  • Step #6 Drain, & set aside.
  • Step #7 Stir milk into zucchini, & let simmer until it is reduced by about half, about 10 mins.
  • Step #8 Add pasta to skillet, & stir well.
  • Step #9 Sprinkle top parsley & 1/4 c Parmesan over the top, & toss.
  • Step #10 Garnish with remaining Parmesan to serve.
