Paula Deen's Almond Chicken Salad Melt Recipe

Ingredients
  • 1/3 c mayonnaise .
  • 1/4 c thousand island dressing .
  • 3 c sliced cooked chicken .
  • 8 slices country white bread .
  • 8 slices swiss cheese .
  • 1/3 c sour cream .
  • 1/4 c butter .
  • 1 tsp honey .
  • 1 tbsp sliced flat leaf parsley .
  • 1/3 c toasted slivered almonds .
  • 3/4 tsp salt

Directions
  • Step #1 In a medium bowl, parsley, mix chicken, almonds, mayonnaise, & salt, sour cream, honey, tossing carefully to mix.
  • Step #2 Spread one side of each slice of bread evenly with Thousand Island dressing.
  • Step #3 Top half of bread slices evenly with chicken salad.
  • Step #4 Place 2 slices Swiss cheese over chicken.
  • Step #5 Top with remaining slices of bread.
  • Step #6 Spread half of butter on outside of one side of each sandwich.
  • Step #7 Place sandwiches, buttered side down, onto a griddle or skillet over medium-low heat.
  • Step #8 Cook 3 to 4 mins, or until golden.
  • Step #9 Spread remaining butter on ungrilled sides of sandwiches, & cook this until golden & cheese is melted.
  • Step #10 Serve as soon as possible.
