Curried Onion Casserole Recipe

Ingredients
  • 3 tbsps flour .
  • 1/8 tsp white pepper .
  • 1/4 tsp paprika .
  • 2 oz sharp cheddar cheese, grated .
  • 4 (20 oz) jars onions, drained .
  • 4 oz butter (1 stick) .
  • 1/8 tsp curry powder (to taste) .
  • 3 chicken bouillon cubes .
  • Topping .
  • 1/8 tsp ground cayenne pepper .
  • 1 1/2 c milk, scalded .
  • 2 slices white bread, buttered with .
  • butter, & cubed

Directions
  • Step #1 Heat the oven to 350 degrees.
  • Step #2 Drain jarred onions (or freshly boiled onions) well & set aside.
  • Step #3 Mix the flour with the dry spices.
  • Step #4 Scald the milk (don't let it burn) over low heat/flame in a small saucepan.
  • Step #5 Melt butter in another saucepan over low heat/flame.
  • Step #6 When it starts to bubble, mix in the flour-spice mixture.
  • Step #7 Gradually whisk in the scalded milk, then add the boullion cubes & bring to a boil, stirring constantly.
  • Step #8 Still stirring, boil one min until sauce thickens.
  • Step #9 Fold in the drained onions & transfer to a (1 1/2 to 2 quart) oven-proof casserole dish.
  • Step #10 Scatter the buttered bread cubes & grated cheese over the top.
  • Step #11 Bake at 350 for 30 mins or until bubbly & topping is starting to brown lightly.
