Hot Buffalo Chicken Pizza Recipe

Ingredients
  • 1/8 c parmesan cheese, shredded .
  • 1 tsp sweet paprika .
  • 1 lb mozzarella cheese, shredded .
  • 1 (2 1/2 oz) package active dry yeast .
  • Sauce for chicken .
  • salt & pepper .
  • Chicken .
  • To Complete Pizza .
  • 1 c warm water .
  • 3-6 drops hot sauce (or to your taste) .
  • 1/4-1/2 c ranch dressing .
  • 1 tbsp olive oil .
  • 1 tsp olive oil .
  • Pizza Dough .
  • 1 tsp chili powder .
  • 1 tsp salt .
  • 3 c all-purpose flour .
  • 2 tbsps butter .
  • 1 tsp sugar .
  • 1/4 c tabasco green jalapeno sauce (it's the only brand I know) .
  • 8 oz boneless skinless chicken breasts

Directions
  • Step #1 Pizza dough:.
  • Step #2 Combine 1 c warm water with 1 tsp of sugar.
  • Step #3 Sprinkle top entire package of yeast on top of warm water & sugar mixture.
  • Step #4 Set aside for 5 mins.
  • Step #5 In a large mixing bowl mix 3 c of flour & 1 tsp salt.
  • Step #6 When yeast has bloomed (it will be foamy & smell), make a well (a hole in the middle) in the flour & salt mixture.
  • Step #7 Pour in yeast combo & the 1 tbs olive oil.
  • Step #8 Stir with a spoon from the middle of the well until all the flour & water is mixd.
  • Step #9 It should make a big blob on your spoon.
  • Step #10 Remove dough from bowl to a floured surface & knead for about 10 mins or until dough is smooth & elastic.
  • Step #11 You can also use the dough hooks on a stand mixer to knead.
  • Step #12 Lightly oil your mixing bowl, return dough to bowl tucking it in to form a ball.
  • Step #13 Turn dough to coat with oil.
  • Step #14 Cover up bowl containing dough with plastic wrap.
  • Step #15 Cover up bowl & plastic wrap with a dish towel.
  • Step #16 If your kitchen is cold you can run hot water over the dish towel then ring it out & place over dough bowl.
  • Step #17 Set dough in a warm place (not on the back of the stove if you have the oven on.
  • Step #18 Don't ask.
  • Step #19 <g>) & let rise 1 hr.
  • Step #20 Chicken:.
  • Step #21 Into a small saute pan, cut chicken into bite size pieces, drizzle chicken with one tsp of olive oil.
  • Step #22 Sprinkle top 1 tsp sweet paprika & 1 tsp chili powder over chicken & toss to coat chicken.
  • Step #23 Cook over med-heat/flame 2 to 3 mins (DON"T PANIC! the chicken will finish cooking in the oven) Remove chicken from pan.
  • Step #24 In the same saucepan melt 2 tbs butter.
  • Step #25 Remove from heat.
  • Step #26 Add 1/4 c green jalapeno tabasco & red tabasco sauce to taste.
  • Step #27 I use 3 to 6 drops (yes, I will admit to being a lukewarm spice lover).
  • Step #28 Return chicken to pan & put in the fridge.
  • Step #29 Preheat oven to 450°F.
  • Step #30 Place one oven rack in lowest position.
  • Step #31 Place one oven rack in middle position On a lightly floured surface, roll out pizza dough.
  • Step #32 If your dough keeps springing back let it rest for about 10 mins.
  • Step #33 Roll & turn dough 1/8 turn each stroke.
  • Step #34 You don't have to be gentle.
  • Step #35 Use even pressure throughout the stroke.
  • Step #36 When you have the size dough you need for your pan, (if using the jelly roll pan I cover the pan with foil wrap & lightly coat the foil wrap with olive oil) place dough in pan.
  • Step #37 Cover up with a thin layer of ranch dressing (I use the back of a big spoon to even out the dressing) & remove chicken pieces with a slotted spoon & arrange evenly around the ranch dressing coated pizza dough.
  • Step #38 Dribbles of the sauce mixture just add zing.
  • Step #39 Cover up pizza with shredded mozzarella.
  • Step #40 Dust mozzarella with parmesan.
  • Step #41 Bake 10 to 15 mins.
  • Step #42 Bake the first 5 on the bottom rack.
  • Step #43 Move pizza to the middle rack to complete baking.
  • Step #44 My idea of a perfectly done pizza is one with golden brown cheese.
  • Step #45 Please cook at least 10 mins to finish chicken.
