Edamole (edamame Guacamole) Recipe

Ingredients
  • 1/2 tsp sea salt .
  • 1 large lime, juice of .
  • 1/2 c broccoli stems (peeled & sliced) .
  • 1 small fresh jalapeno (minced fine *remove seeds if you don't want the heat.) .
  • 1/4 tsp garlic powder .
  • 1/2 c edamame (shelled) .
  • 1/4 tsp black pepper .
  • 1/4 tsp chili powder .
  • 1/4 tsp cumin .
  • 1 tbsp fresh cilantro (minced) .
  • 2 garlic cloves (minced fine) .
  • 1/2 small lemon, juice of .
  • 1/4 c yellow onions (sliced fine) .
  • 1 small tomato (sliced fine)

Directions
  • Step #1 Simmer edamame in 2 c water for 2 mins.
  • Step #2 (Make sure to use the beans out of the shells, NOT the whole edamame pods).
  • Step #3 Remove edamame from the pot with a slotted spoon & set aside to cool.
  • Step #4 Blanche the peeled broccoli stems in the same water for about 2 mins.
  • Step #5 Drain & set aside to cool.
  • Step #6 When edamame & broccoli are cooled, purée both together in a mixer, until smooth.
  • Step #7 Cut avocados in half, remove pits, & spoon out the avocado from its skin into a large bowl.
  • Step #8 Mash the avocados together with the lemon & lime juice.
  • Step #9 Add the edamame-broccoli mixture to the avocado & stir this together well.
  • Step #10 Fold in the remaining ingredients, including the spice mixture.
  • Step #11 Taste & adjust the seasonings to your own taste from there.
