Greek Spinach Pie Recipe

Ingredients
  • 28 oz frozen sliced spinach (Cooked & squeeze drained) .
  • 3 pie crusts .
  • 6 tbsps flour .
  • 1 1/2 lbs shredded mozzarella cheese .
  • 2 tsps nutmeg .
  • 6 tbsps butter .
  • 2 minced garlic cloves .
  • 12 eggs .
  • 4 tbsps butter .
  • 3 c milk .
  • 1 c sliced onions .
  • 3 tsps vanilla .
  • 3 tsps salt .
  • 1 1/2 tsps pepper

Directions
  • Step #1 Bake the pie crusts until golden brown in a pre-heated 350 degree oven.
  • Step #2 Heat 4 tbsps butter in skillet; sauté onion & garlic.
  • Step #3 Stir in the cooked, squeezed drained spinach.
  • Step #4 In another saucepan, melt 6 tbsps butter, stir in the flour.
  • Step #5 Gradually stir in the milk until it thickens, then add salt, vanilla, pepper, nutmeg & spinach mixture.
  • Step #6 Beat eggs; stir eggs & cheese into mixture.
  • Step #7 Evenly divide entire mixture between baked pie crusts.
  • Step #8 Cover up edges of pie crusts with foil wrap & bake this at 350 for 35-40 mins (or until firm & puffed.
  • Step #9 ).
  • Step #10 This tastes like a quiche & can be served either as a side dish or as the main course.
